Tuesday's Lunch: New Recipe

First things first, Happy Memorial Day! I hope you are all enjoying your day. We are enjoying the weekend full of snow, rain and indoor fun! Welcome to Montana. Thank you to all of those who has served and are currently serving (thank you hubby!).
Second thing, made a new recipe this weekend for lunches, and they are awesome!!!!

Pepperoni Pizza Muffins:

Ingredients:
*3 cups biscuit mix (I used Heart Smart Bisquick)
*1 can tomato soup
*3/4 cup water
*1/2 cup shredded mozzarella cheese
*1/2 cup shredded cheddar cheese
*1/2 cup diced pepperoni (I used the mini turkey pepperoni)
*1 T. dried minced onion
*1 tsp. Italian seasoning

1. Place biscuit mix in a bowl. Combine remaining ingredients; stir into biscuit mix just until moistened. Fill greased muffin cups three-fourths full.
2. Bake at 350 degrees for 17-20 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm, refrigerate leftovers or freeze for future purpose.


Here it is packed in Bubs' lunch for tomorrow:

*Buddy Fruit (Apple-Strawberry)
*Trader Joe's Jelly Fruits
*Babybel Cheese
*Pepperoni Pizza Muffin (w/ marinara sauce to dip in green container)
*Sliced peaches
