Thursday's Lunch: Kabobs

Went to the doctor today. Diagnosed with allergies and a sinus infection. Awesome.

In this bento:




















*Cheddar sausage and colby jack cheese kabobs
*Small blue container of ketchup
*Watermelon cubes
*The last of the energy bites
*'Smore graham cracker fish
*Yoplait Greek Strawberry yogurt
 
I was reminded that I never shared the recipe for the Energy Bites. So here you go:
 
Energy Bites 




















1 cup dry old fashioned oats
1 cup coconut flakes
1/2 cup chocolate chips
1/2 cup peanut butter (or any type of swap, i.e. Sunbutter)
1/2 cup ground flax seed
1/3 cup honey
1 tsp. vanilla extract
Dash of sea salt
 
Mix all ingredients thoroughly in a large bowl. Chill in the refrigerator for at least 30 minutes. Roll into balls about the size of a large grape. Store in an air tight container in the refrigerator for up to 2 weeks. This recipe makes about 20 energy bites.
